Preheat air fryer to 375°F (190°C).
In a skillet, sauté garlic, cabbage, carrots, and bean sprouts for 2–3 minutes until softened. Stir in soy sauce and sesame oil. Remove from heat.
Place 2 tbsp of the filling in each spring roll wrapper. Fold in the sides and roll tightly, sealing with a little water.
Lightly spray each roll with olive oil.
Arrange spring rolls in the air fryer basket in a single layer.
Cook for 10–12 minutes, flipping halfway, until golden brown and crispy.
Serve hot with dipping sauces like sweet chili or soy sauce.
