  • 4 cups zucchini shredded
  • 1 teaspoon salt
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • ½ cup all-purpose flour
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • ¼ teaspoon black pepper
  • For Cooking
  • 2 tablespoons olive oil
  • Optional Dipping Sauce
  • Sour cream
  • Greek yogurt
  • Ranch dressing
  • Garlic aioli

Method
 

  1. Place shredded zucchini in a large bowl and sprinkle with salt.
  2. Let sit for 10 minutes to draw out excess moisture.
  3. Transfer zucchini to a clean kitchen towel and squeeze out as much liquid as possible.
  4. In a large bowl, combine zucchini, eggs, Parmesan cheese, flour, garlic, parsley, and black pepper.
  5. Mix until well combined.
  6. Form the mixture into small patties using your hands or a scoop.
  7. Heat olive oil in a large skillet over medium heat.
  8. Cook fritters for 3–4 minutes per side until golden brown and crispy.
  9. Transfer to a paper towel-lined plate.
  10. Serve warm with your favorite dipping sauce.
  11. Air Fryer Instructions
  12. Preheat air fryer to 375°F (190°C).
  13. Lightly spray the air fryer basket with cooking spray.
  14. Arrange fritters in a single layer.
  15. Cook for 10–12 minutes, flipping halfway through cooking.
  16. Serve immediately.

  • For a lower-carb version, substitute almond flour for all-purpose flour.
