Ingredients
  

  • 4 cups fresh broccoli florets chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 4 cups vegetable or chicken broth
  • 2 cups milk or half-and-half
  • 2 cups sharp cheddar cheese grated
  • Salt and black pepper to taste
  • Optional: ½ tsp paprika or nutmeg for extra flavor

Method
 

  1. Melt butter in a large pot over medium heat. Add onion and garlic; sauté until soft and fragrant.
  2. Stir in flour and cook for 1–2 minutes to form a roux. Gradually whisk in broth until smooth.
  3. Add broccoli and simmer for 10–12 minutes, until tender.
  4. Pour in milk, reduce heat, and slowly stir in shredded cheddar until melted and creamy.
  5. Season with salt, pepper, and optional spices.
  6. Serve hot with crusty bread or in a bread bowl.

Notes

  • Use sharp cheddar for a stronger flavor.
  • For a smoother texture, blend half the soup before adding cheese.
  • Swap cream for milk to make a healthy broccoli cheese soup.
  • Add carrots for extra sweetness and color.
  • For a crockpot version, add all ingredients except cheese and milk, cook 4–6 hours on low, then stir in cheese at the end.
