Ingredients
  

  • For the Dough:
  • 2 ¼ teaspoons active dry yeast
  • ¾ cup warm milk about 110°F / 43°C
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract or seeds from 1 vanilla bean
  • ¼ cup unsalted butter softened
  • 2 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • For Frying & Topping:
  • Vegetable oil for frying
  • Powdered sugar for dusting
  • Optional Vanilla Glaze:
  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Method
 

  1. Step 1 – Activate the Yeast
  2. In a small bowl, combine warm milk and active dry yeast. Let it sit for 5–10 minutes, until foamy and bubbly — this means the yeast is active and ready.
  3. Step 2 – Mix the Dough
  4. In a large mixing bowl, whisk together sugar, egg, vanilla, and softened butter. Add the yeast mixture and stir until combined. Gradually mix in flour and salt until a soft dough forms.
  5. Step 3 – Knead and Let Rise
  6. Transfer dough to a floured surface and knead for about 5–6 minutes, or until smooth and elastic. Place it in a greased bowl, cover with a towel, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
  7. Step 4 – Roll and Cut
  8. Punch down the risen dough. Roll it out to ¼-inch thickness and cut into squares, circles, or classic diamond shapes using a knife or cutter.
  9. Step 5 – Fry the Beignets
  10. Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry each piece for about 1–2 minutes per side, turning until golden brown. Remove and drain on paper towels.
  11. Step 6 – Dust and Serve
  12. While still warm, dust generously with powdered sugar or drizzle with vanilla glaze. Serve immediately for the best texture and flavor.
