Step 1 – Activate the Yeast
In a small bowl, combine warm milk and active dry yeast. Let it sit for 5–10 minutes, until foamy and bubbly — this means the yeast is active and ready.
Step 2 – Mix the Dough
In a large mixing bowl, whisk together sugar, egg, vanilla, and softened butter. Add the yeast mixture and stir until combined. Gradually mix in flour and salt until a soft dough forms.
Step 3 – Knead and Let Rise
Transfer dough to a floured surface and knead for about 5–6 minutes, or until smooth and elastic. Place it in a greased bowl, cover with a towel, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
Step 4 – Roll and Cut
Punch down the risen dough. Roll it out to ¼-inch thickness and cut into squares, circles, or classic diamond shapes using a knife or cutter.
Step 5 – Fry the Beignets
Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry each piece for about 1–2 minutes per side, turning until golden brown. Remove and drain on paper towels.
Step 6 – Dust and Serve
While still warm, dust generously with powdered sugar or drizzle with vanilla glaze. Serve immediately for the best texture and flavor.
