Preheat oven:
Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
Combine dry ingredients:
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
Cream butter and sugar:
In a large mixing bowl, beat softened butter and sugar for 3–4 minutes until pale and fluffy.
Add eggs and vanilla:
Beat in the eggs one at a time, then mix in vanilla (and almond extract if using).
Mix wet and dry:
Add dry ingredients alternately with milk, mixing just until combined. Do not overmix.
Bake:
Divide the batter evenly between prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool and frost:
Cool the cakes completely before frosting.
Make whipped cream frosting:
Whip cream, sugar, and vanilla until soft peaks form. Spread or pipe over cooled cake layers.
