  • 1 cup cherry tomatoes halved

  • 1/4 cup red onion thinly sliced
  • 1/2 cup mozzarella balls or cubes
  • 1/4 cup grated Parmesan cheese
  • Dressing:
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder

Method
 

  1. Cook tortellini according to package instructions until tender.
