  • 6 large ripe tomatoes or 4 cups cherry tomatoes, chopped
  • 1 tbsp tomato paste
  • 3 cups vegetable or chicken broth
  • 1 tsp sugar optional, to balance acidity
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried basil or ¼ cup fresh basil leaves
  • ½ cup heavy cream or coconut milk optional for creamy tomato basil bisque
  • Fresh basil leaves & olive oil for garnish

Method
 

  1. Sauté aromatics:
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute.

  4. Stir in the chopped tomatoes, tomato paste, broth, sugar, salt, pepper, and basil. Mix well to combine.
  5. Simmer:
  6. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, stirring occasionally until the tomatoes are soft and the flavors deepen.
  7. Blend:
  8. Use an immersion blender (or carefully transfer to a regular blender) and blend until smooth and creamy.
  9. Add cream (optional):
  10. Stir in the heavy cream or coconut milk for a richer texture, transforming it into a silky tomato basil bisque.
  11. Serve:
