Ingredients
  

  • For the Brownie Base:
  • 1 cup 225g unsalted butter, melted
  • 1 cup 200g sugar
  • ½ cup 100g brown sugar
  • 1 cup 120g all-purpose flour
  • 1 cup 120g cocoa powder
  • 3 large eggs
  • 1 tsp vanilla extract
  • Pinch of salt
  • For the Tiramisu Layer:
  • 1 cup mascarpone cheese
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup strong brewed espresso cooled
  • 2 tbsp cocoa powder for dusting

Method
 

  1. Preheat Oven: Heat oven to 350°F (175°C). Line an 8x8-inch (20cm) baking pan with parchment paper.
  2. Make Brownie Batter: In a bowl, whisk together melted butter, sugar, and vanilla. Beat in eggs one at a time. Sift in cocoa powder, flour, and salt. Stir until combined.
  3. Bake Brownies: Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick comes out with moist crumbs. Let cool completely.
  4. Prepare Mascarpone Cream: In a mixing bowl, whip mascarpone, cream, powdered sugar, and vanilla until smooth and fluffy.
  5. Add Coffee Flavor: Brush cooled brownies with espresso to soak slightly without making them soggy.
  6. Layer Tiramisu Cream: Spread the mascarpone mixture evenly over brownies. Dust generously with cocoa powder.
  7. Chill and Slice: Refrigerate for at least 1 hour before slicing into squares for clean edges.

Notes

  • For extra richness, add a splash of coffee liqueur to the espresso before brushing.
  • Do not overbake the brownies—keeping them slightly fudgy enhances the tiramisu feel.
  • Store covered in the fridge for up to 4 days.
  • Can be frozen (without mascarpone topping) for up to 2 months.
