Method
- Activate Yeast (If Using Active Dry)
- In a bowl, mix warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
- Make the Dough
- Add flour, salt, softened butter, and egg. Mix until combined, then knead for 8–10 minutes until smooth and elastic.
- Bread Machine Option: Add ingredients in manufacturer’s order and run the Dough Cycle.
- First Rise
- Place the dough in an oiled bowl, cover, and let rise for 1 hour, or until doubled.
- Prepare Garlic Herb Cheese Filling
- In a small bowl, mix melted butter, garlic, herbs, salt, and pepper. Set aside.
- Roll Out Dough
- Punch down the risen dough. Roll into a large rectangle, about 12×18 inches.
- Add Filling
- Spread the garlic herb butter mixture evenly over the dough. Sprinkle mozzarella, cheddar, and parmesan over the top.
- Create the Swirl
- Roll up the dough tightly from the long side to form a log.
- Cut and Twist
- Slice the log lengthwise into two long halves. Twist the halves together, cut-side up, to expose the cheese swirls.
- Second Rise
- Place the twisted dough into a greased loaf pan. Cover and rise for 30 minutes.
- Bake
- Bake at 350°F (175°C) for 28–32 minutes, until golden and bubbling.
- Finish (Optional)
- Brush with melted butter and sprinkle extra parmesan and parsley.
- Serve
- Allow to cool slightly before slicing. Serve warm with pasta, soup, or enjoy plain.
Notes
Bread Machine Friendly: Use the dough cycle for easy kneading and rising.
Cheese Options: Mozzarella melts best, but gruyere, provolone, or cheddar add great flavor.
Make Ahead: Prepare dough a day in advance and refrigerate.
Storage: Wrap tightly; keeps 3 days at room temp or freeze up to 2 months.
Variation: Turn into garlic pull apart bread by slicing into strips, stacking, and arranging in a loaf pan.
Extra Flavor: Add red pepper flakes for heat or roasted garlic for deeper flavor.
