Method
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Place the peeled and cubed sweet potatoes in a large pot and cover with water.
- Bring to a boil and cook for 15–20 minutes, or until the sweet potatoes are fork-tender.
- Drain the sweet potatoes thoroughly and transfer them to a large mixing bowl.
- Mash until mostly smooth.
- Add melted butter, brown sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt.
- Mix until creamy and well combined.
- Spread the sweet potato mixture evenly into the prepared baking dish.
- Sprinkle the mini marshmallows evenly over the top. Add chopped pecans if desired.
- Bake uncovered for 25–30 minutes, until the filling is hot and the marshmallows are golden.
- If the marshmallows brown too quickly, loosely cover the casserole with foil.
- Let the casserole rest for about 5 minutes before serving.
