Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 20 oz can pineapple chunks, with juice
  • ¾ cup brown sugar
  • ½ cup soy sauce
  • cup ketchup
  • 2 cloves garlic minced
  • 1 tablespoon cornstarch optional, for thickening
  • 2 tablespoons water for cornstarch slurry
  • 1 teaspoon ground ginger optional
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish
  • Cooked white rice or coconut rice for serving

Method
 

  1. Prepare the chicken: Lightly grease the slow cooker and place the chicken in the bottom.
  2. Mix the sauce: In a bowl, whisk together pineapple juice (from the can), soy sauce, brown sugar, ketchup, garlic, and ginger.
  3. Cook: Pour the sauce over the chicken. Cover and cook on Low for 5–6 hours or High for 3–4 hours, until the chicken is tender.
  4. Add pineapple: About 30 minutes before serving, stir in the pineapple chunks.
  5. Thicken the sauce (optional): Mix cornstarch and water in a small bowl, then stir into the crockpot. Cook uncovered for 20–30 minutes until the sauce thickens.
  6. Serve: Garnish with green onions and sesame seeds. Serve hot over rice or with roasted vegetables.

Notes

  • Use chicken thighs for extra juiciness.
