Method
- Preheat oven to 375°F (190°C). Line muffin tin with paper liners.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, milk, butter, and vanilla.
- Combine wet and dry ingredients gently.
- Fold in strawberries (and optional add-ins).
- Fill muffin cups ¾ full.
- Bake 18–22 minutes until golden brown.
- Cool slightly before serving.
Notes
- Toss strawberries in a little flour before adding to prevent sinking.
- Don’t overmix the batter—keep it light and fluffy.
- Try adding a cinnamon streusel for a bakery-style finish.
