Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup milk or buttermilk
  • ½ cup melted butter or vegetable oil
  • 1 tsp vanilla extract
  • 1 ½ cups fresh strawberries chopped
  • Optional Add-ins:
  • ½ cup white chocolate chips for strawberry white chocolate muffins
  • Streusel topping for strawberry muffins with crumb topping
  • ½ cup oats for strawberry muffins healthy

Method
 

  1. Preheat oven to 375°F (190°C). Line muffin tin with paper liners.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. In another bowl, mix eggs, milk, butter, and vanilla.
  4. Combine wet and dry ingredients gently.
  5. Fold in strawberries (and optional add-ins).
  6. Fill muffin cups ¾ full.
  7. Bake 18–22 minutes until golden brown.
  8. Cool slightly before serving.

Notes

  • Toss strawberries in a little flour before adding to prevent sinking.
  • Don’t overmix the batter—keep it light and fluffy.
  • Try adding a cinnamon streusel for a bakery-style finish.
