Strawberry Crunch Cheesecake Tacos

Ingredients
  

  • For the Taco Shells:
  • 6 small flour tortillas
  • 2 tablespoons melted butter
  • ¼ cup granulated sugar
  • ½ teaspoon cinnamon
  • For the Cheesecake Filling:
  • 1 cup heavy cream
  • 8 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the Strawberry Crunch Topping:
  • 12 Golden Oreos crushed
  • 2 tablespoons freeze-dried strawberries crushed
  • 2 tablespoons melted butter
  • Optional Garnish:
  • Fresh diced strawberries
  • Whipped cream
  • Strawberry syrup drizzle

Method
 

  1. Make the Taco Shells:
  2. Preheat oven to 375°F (190°C). Brush both sides of tortillas with melted butter, then sprinkle with cinnamon sugar. Drape them over oven rack bars to form taco shapes and bake 8–10 minutes, until golden. Let cool completely.
  3. Prepare Cheesecake Filling:
  4. In a bowl, beat softened cream cheese with powdered sugar and vanilla until smooth. In a separate bowl, whip the heavy cream to stiff peaks, then fold into the cream cheese mixture until fluffy. Chill until ready to use.
  5. Make Strawberry Crunch:
  6. Combine crushed Golden Oreos, freeze-dried strawberries, and melted butter. Mix until crumbly and well coated.
  7. Assemble Tacos:
  8. Spoon or pipe cheesecake filling into each taco shell. Top generously with strawberry crunch mixture and garnish with diced strawberries, whipped cream, or syrup.
  9. Serve & Enjoy:
  10. Chill for 10–15 minutes before serving for the best texture and flavor!

Notes

  • Fill tacos just before serving to keep shells crispy.
