Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries chopped
  • 1 cup heavy cream for frosting
  • 200 g semi-sweet chocolate melted, for frosting
  • Fresh strawberries for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. In a bowl, whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, oil, buttermilk, and vanilla. Mix until smooth.
  4. Gently fold in chopped strawberries.
  5. Divide batter into cake pans and bake for 25–30 minutes, or until a toothpick comes out clean.
  6. Let cakes cool completely before frosting.
  7. For frosting, whip heavy cream, then fold in melted chocolate until smooth.
  8. Frost cake layers, stack, and garnish with fresh strawberries on top.

Notes

  • Swap buttermilk with regular milk + 1 tsp lemon juice if needed.
