Method
- If using fresh corn, grill or boil until tender. Allow to cool, then cut kernels from the cob.
- Dice avocado and cucumber into bite-sized pieces. Slice strawberries and finely dice red onion.
- In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
- In a large bowl, combine corn, avocado, strawberries, cucumber, onion, and herbs.
- Pour dressing over salad and toss gently until combined.
- Top with feta cheese if desired and serve immediately.
