Ingredients

  • 3 cups corn kernels fresh, canned, or grilled
  • 2 ripe avocados diced
  • 1 1/2 cups strawberries sliced
  • 1 cucumber diced
  • 1/4 cup red onion diced
  • 1/4 cup chopped cilantro or basil
  • 1/4 cup crumbled feta cheese optional
  • For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Method
 

  1. If using fresh corn, grill or boil until tender. Allow to cool, then cut kernels from the cob.
  2. Dice avocado and cucumber into bite-sized pieces. Slice strawberries and finely dice red onion.
  3. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
  4. In a large bowl, combine corn, avocado, strawberries, cucumber, onion, and herbs.
  5. Pour dressing over salad and toss gently until combined.
  6. Top with feta cheese if desired and serve immediately.
