- Cook noodles: Boil noodles according to package directions. Drain and set aside.
- Sear chicken: Heat oil in a large pan over medium-high heat. Season chicken with salt and pepper and cook 5–7 minutes, stirring, until golden and cooked through. Remove to a plate.
- Build the sauce: Lower heat to medium. Add garlic and ginger and cook 30 seconds until fragrant.
- Mix & thicken: Whisk soy sauce, honey, vinegar, and water together. Stir in the cornstarch until smooth, then pour into the pan. Simmer 2–3 minutes until thick and glossy.
- Combine: Return chicken to the pan, add noodles, and toss until everything is coated in sticky garlic sauce.
- Finish & serve: Stir in vegetables if using. Top with green onions, sesame seeds, and a pinch of chili flakes. Serve hot.
Notes
Use low-sodium soy sauce so the dish doesn’t get too salty.
Want it sweeter or spicier? Add a splash more honey or a pinch of chili.
For meal prep, keep noodles and sauce separate and toss together when reheating.
