  • 1 lb 450 g chicken breast or thighs, cut into bite-size pieces
  • 2 tbsp oil olive or vegetable
  • Salt & pepper to taste
  • Sticky garlic sauce:
  • 4 cloves garlic minced
  • 1 tsp grated fresh ginger or 1/2 tsp ground
  • 1/3 cup soy sauce low sodium recommended
  • 3 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • 1/2 cup water
  • 1 tbsp cornstarch
  • Optional add-ins / garnish:
  • 1 cup broccoli carrots, or snap peas (lightly steamed)
  • 2 green onions sliced
  • 1 tsp sesame seeds
  • Pinch red pepper flakes optional heat

Method

  1. Cook noodles: Boil noodles according to package directions. Drain and set aside.
  2. Sear chicken: Heat oil in a large pan over medium-high heat. Season chicken with salt and pepper and cook 5–7 minutes, stirring, until golden and cooked through. Remove to a plate.
  3. Build the sauce: Lower heat to medium. Add garlic and ginger and cook 30 seconds until fragrant.
  4. Mix & thicken: Whisk soy sauce, honey, vinegar, and water together. Stir in the cornstarch until smooth, then pour into the pan. Simmer 2–3 minutes until thick and glossy.
  5. Combine: Return chicken to the pan, add noodles, and toss until everything is coated in sticky garlic sauce.
  6. Finish & serve: Stir in vegetables if using. Top with green onions, sesame seeds, and a pinch of chili flakes. Serve hot.

Notes

Use low-sodium soy sauce so the dish doesn’t get too salty.
Want it sweeter or spicier? Add a splash more honey or a pinch of chili.
For meal prep, keep noodles and sauce separate and toss together when reheating.
Make it vegetarian: swap chicken for tofu or mushrooms.
Great for cozy Fall Winter lunch ideas and fast lazy dinner ideas healthy when you add extra veggies.
