- Preheat oven to 350°F.
- In a large bowl, combine peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch. Stir gently.
- Pour melted butter into a 9x13-inch baking dish.
- In another bowl, whisk together flour, sugar, baking powder, salt, and milk until smooth.
- Pour batter evenly over melted butter without stirring.
- Spoon peach mixture evenly over the batter. Do not stir.
- Bake for 40–45 minutes or until golden brown and bubbly.
- Allow cobbler to cool slightly before serving warm.
