  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • For the Cobbler Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter melted

Method
 

  1. Preheat oven to 350°F.
  2. In a large bowl, combine peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch. Stir gently.
  3. Pour melted butter into a 9x13-inch baking dish.
  4. In another bowl, whisk together flour, sugar, baking powder, salt, and milk until smooth.
  5. Pour batter evenly over melted butter without stirring.
  6. Spoon peach mixture evenly over the batter. Do not stir.
  7. Bake for 40–45 minutes or until golden brown and bubbly.
  8. Allow cobbler to cool slightly before serving warm.
