Slow Cooker Honey Garlic Chicken and Veggies

This Slow Cooker Honey Garlic Chicken and Veggies is a no-fuss dinner made in your crock pot slow cooker. Juicy chicken, tender potatoes, carrots, and broccoli soak up a sweet and savory honey garlic sauce for an easy, healthy crockpot meal perfect for busy nights.

Ingredients
  

  • 4 boneless skinless chicken breasts (or thighs)
  • ½ cup honey
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • For the Vegetables:
  • 2 cups baby carrots
  • 1 lb baby potatoes halved
  • 1 small onion sliced
  • 1 cup broccoli florets add near the end
  • Optional Garnish:
  • Fresh parsley
  • Sesame seeds

Method
 

  1. Whisk the sauce: In a small bowl, mix honey, soy sauce, olive oil, garlic, vinegar, thyme, salt, and pepper.
  2. Layer the crock pot: Place chicken in the bottom of your slow cooker. Arrange carrots, potatoes, and onion around it.
  3. Add the sauce: Pour the honey garlic mixture evenly over the top.
  4. Cook: Cover and cook on Low for 6–7 hours or High for 3–4 hours until chicken is tender and vegetables are cooked.
  5. Add broccoli: Stir in broccoli 30 minutes before serving so it stays crisp and green.
  6. Serve: Garnish with parsley and sesame seeds, and drizzle with extra sauce from the pot.

Notes

  • To thicken the sauce, whisk 1 tablespoon cornstarch with 2 tablespoons water and stir into the crockpot for the last 15 minutes.
  • Substitute chicken thighs for juicier meat.
  • For meal prep, divide into containers with rice or quinoa — perfect healthy crockpot lunches.
  • Add chili flakes for a touch of spice.
