Slow Cooker Garlic Butter Beef Bites & Potatoes

Tender beef bites and baby potatoes simmer slowly in rich garlic butter and herbs — a cozy, crowd-pleasing dinner that tastes gourmet with almost no work.

Ingredients
  

  • 2 lbs beef stew meat or chuck cut into 1-inch cubes
  • 1.5 lbs baby potatoes halved
  • 6 tbsp butter melted (divided)
  • 1 tbsp olive oil
  • 5 cloves garlic minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1.5 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt plus more to taste
  • 1/2 tsp black pepper
  • 2 tbsp chopped parsley optional

Method
 

  1. Season beef with salt, pepper, paprika, and half the Italian seasoning.
  2. Optional: Heat olive oil in a skillet and sear beef 1–2 minutes per side.
  3. Add potatoes to the slow cooker. Place beef on top.
  4. Whisk melted butter, garlic, broth, Worcestershire, and remaining seasoning.
  5. Pour the mixture over beef and potatoes.
  6. Cook on LOW 6–8 hours or HIGH 3–4 hours, until tender.
  7. Stir, adjust seasoning, and finish with remaining butter and parsley.

Notes

For thicker sauce, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) and cook 10 minutes longer.
Add carrots or mushrooms during the last 2 hours if desired.
Great served with bread, rice, or over noodles.
