Cook the Beef:
Brown ground beef in a skillet over medium heat. Drain any excess grease. Season with salt, pepper, and smoked paprika.
Prepare the Slow Cooker:
Lightly grease your crockpot with oil or non-stick spray.
Layer Ingredients:
Place half of the sliced potatoes in the bottom.
Add half of the cooked beef.
Spoon over half of the beans and onions.
Pour a little of each soup over the layer.
Sprinkle a handful of cheddar cheese.
Repeat layers, finishing with cheese on top.
Cook:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender and casserole is bubbling.
Finish & Serve:
Gently stir, top with more cheese, and let it melt. Garnish with parsley or chives. Serve warm.
