Ingredients
  

  • Main Ingredients:
  • lbs ground beef or turkey
  • 6 medium potatoes thinly sliced
  • 1 can 15 oz baked beans or kidney beans, drained
  • 1 can 10.5 oz cream of mushroom soup
  • 1 can 10.5 oz cream of chicken soup
  • 1 small onion chopped
  • 1 cup shredded cheddar cheese plus extra for topping
  • ½ cup sour cream optional, for extra creaminess
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Chopped parsley or chives for garnish

Method
 

  1. Cook the Beef:
  2. Brown ground beef in a skillet over medium heat. Drain any excess grease. Season with salt, pepper, and smoked paprika.
  3. Prepare the Slow Cooker:
  4. Lightly grease your crockpot with oil or non-stick spray.
  5. Layer Ingredients:
  6. Place half of the sliced potatoes in the bottom.
  7. Add half of the cooked beef.
  8. Spoon over half of the beans and onions.
  9. Pour a little of each soup over the layer.
  10. Sprinkle a handful of cheddar cheese.
  11. Repeat layers, finishing with cheese on top.
  12. Cook:
  13. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender and casserole is bubbling.
  14. Finish & Serve:
  15. Gently stir, top with more cheese, and let it melt. Garnish with parsley or chives. Serve warm.

Notes

  • Use Yukon Gold or Russet potatoes for the best texture.
  • Add corn, black beans, or jalapeños for a flavor twist.
  • For a creamier dish, stir in sour cream or cream cheese before serving.
