Ingredients
  

  • For the Brie
  • 1 wheel brie cheese 8 oz
  • Garlic Herb Butter
  • 3 tbsp unsalted butter melted
  • 2 cloves garlic minced
  • 1 tbsp fresh rosemary or thyme chopped
  • 1 tbsp fresh parsley chopped
  • Pinch of salt
  • Black pepper to taste
  • Optional Add-Ons
  • 1 sheet puff pastry for baked brie in puff pastry
  • 1 egg for egg wash if using puff pastry
  • Honey for drizzling
  • Crushed red pepper flakes
  • Toasted walnuts or pecans

Method
 

  1. Prepare the Brie
  2. Preheat oven to 350°F (175°C).
  3. Remove brie from packaging but keep the rind on.
  4. Place brie on a small baking dish or parchment-lined tray.
  5. Score the top of the cheese in a crosshatch pattern.
  6. Make Garlic Herb Butter
  7. In a small bowl, mix together melted butter, garlic, rosemary/thyme, parsley, salt, and pepper.
  8. Spoon evenly over the scored brie, letting it seep into the cuts.
  9. Bake
  10. Bake for 12–15 minutes, or until soft, melty, and lightly bubbling.
  11. Optional: Puff Pastry Version
  12. Wrap the brie completely in puff pastry, sealing edges.
  13. Brush with egg wash and bake at 400°F (200°C) for 20–25 minutes until golden.
  14. Serve
  15. Let rest 2 minutes before serving warm with bread or crackers.

Notes

Do not remove the rind — it keeps the cheese together as it bakes.
Fresh herbs give the best flavor; avoid dried herbs if possible.
Avoid overbaking or the cheese may leak out.
Serve immediately for the best melty texture.
Great pairings: baguette slices, crostini, crackers, apple slices, grapes, or charcuterie meats.
To reheat, warm in the oven at 300°F (150°C) for 5–7 minutes.
