Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and reserve ½ cup of pasta water.
Cook the Sausage:
Heat olive oil in a skillet over medium heat. Add the sausage (remove casing if necessary). Break it into small pieces and cook until browned.
Add Aromatics:
Stir in the onion and garlic. Sauté for 2–3 minutes until fragrant and translucent.
Prepare the Sauce:
Add crushed tomatoes (or cream for a creamy version) and Italian seasoning. Simmer for 5–10 minutes until slightly thickened.
Combine:
Add the cooked pasta to the skillet and toss to coat. Add a splash of pasta water to loosen the sauce if needed.
Finish and Serve:
Stir in Parmesan cheese, garnish with fresh herbs, and serve hot.
