Ingredients
  

  • For the Crust:
  • 1 ½ cups Oreo cookie crumbs about 18 cookies
  • 4 tbsp unsalted butter melted
  • 1 tbsp cocoa powder
  • 1 tsp red food coloring optional, for dramatic effect
  • For the Cheesecake Filling:
  • 24 oz 680g cream cheese, softened
  • 1 cup sugar
  • 3 large eggs room temperature
  • 1 cup sour cream
  • ¼ cup heavy cream
  • 2 tbsp cocoa powder
  • 2 tsp vanilla extract
  • 2 tsp red food coloring
  • For the Strawberry Topping:
  • 2 cups fresh strawberries halved
  • ½ cup strawberry jam melted for glaze
  • Optional: drizzle of melted chocolate for garnish

Method
 

  1. Prepare Crust – Preheat oven to 325°F (160°C). Mix Oreo crumbs, melted butter, cocoa powder, and food coloring until combined. Press into the bottom of a 9-inch springform pan. Bake for 8 minutes, then set aside.
  2. Make Cheesecake Batter – Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing slowly. Stir in sour cream, heavy cream, cocoa powder, vanilla, and food coloring. Mix until creamy and uniform.
  3. Bake Cheesecake – Pour batter over crust. Place the springform pan in a larger roasting pan filled with 1 inch of hot water (water bath). Bake for 55–65 minutes until the edges are set but the center jiggles slightly.
  4. Cool and Chill – Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Remove, cover, and chill for at least 4–6 hours or overnight.
  5. Add Strawberry Topping – Once chilled, top with fresh strawberry halves. Brush with melted strawberry jam for a glossy finish. Optional: drizzle melted chocolate for an elegant touch.
