Ingredients
  

  • ½ cup rolled oats
  • ½ cup milk dairy or plant-based: almond, oat, or coconut milk
  • ¼ cup pumpkin puree not pumpkin pie filling
  • 2 tbsp Greek yogurt optional for creaminess
  • 1 tbsp chia seeds
  • 1 –2 tsp maple syrup or honey adjust to taste
  • ½ tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt
  • Optional Toppings:
  • 1 tbsp almond butter or peanut butter
  • 2 tbsp granola
  • Crushed pecans or walnuts
  • Sprinkle of pumpkin pie spice
  • Few dark chocolate chips

Method
 

  1. Combine Ingredients:
  2. In a mason jar or airtight container, mix rolled oats, milk, pumpkin puree, Greek yogurt, chia seeds, maple syrup, pumpkin pie spice, cinnamon, vanilla extract, and a pinch of salt.
  3. Mix Thoroughly:
  4. Stir well until all ingredients are evenly combined and the mixture is smooth.
  5. Refrigerate Overnight:
  6. Seal the container and refrigerate for at least 6 hours, preferably overnight. This allows the oats and chia seeds to absorb the liquid and thicken into a creamy consistency.
  7. Serve:
  8. In the morning, give the oats a good stir. If too thick, add a splash of milk to loosen it up.
  9. Add Toppings:
  10. Finish with your favorite toppings — almond butter, granola, nuts, or chocolate chips — and enjoy cold straight from the jar!
