Ingredients
Method
- Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan and line it with parchment paper if desired.
- Make the crumb topping by combining flour, brown sugar, cinnamon, and salt in a bowl. Stir in the melted butter until coarse crumbs form. Set aside.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the pumpkin puree, sour cream, and vanilla until smooth.
- Gradually add the dry ingredients to the pumpkin mixture. Mix just until combined; do not overmix.
- Spread the batter evenly into the prepared baking pan.
- Sprinkle the crumb topping evenly over the batter.
- Bake for 40–50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Cool in the pan for 15–20 minutes before slicing.
- If desired, whisk together powdered sugar, milk, and vanilla and drizzle the glaze over the cooled cake.
Notes
Use pure pumpkin puree, not pumpkin pie filling.
Do not overmix the batter to keep the cake soft and tender.
Chopped pecans or walnuts can be added to the crumb topping.
Oven temperatures vary, so begin checking the cake around 40 minutes.
