Servings: 18 muffins

Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Optional
  • ¼ cup chopped pecans or walnuts
  • Extra chocolate chips for topping
  • ½ teaspoon pumpkin pie spice

Method

  1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease the cavities.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a separate large bowl, whisk together the brown sugar, granulated sugar, pumpkin puree, eggs, vegetable oil, milk, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture.
  5. Stir gently until just combined. Do not overmix the batter.
  6. Fold in the chocolate chips, reserving a few for topping.
  7. Divide the batter evenly between the muffin cups, filling each about ¾ full.
  8. Sprinkle the remaining chocolate chips over the tops.
  9. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Cool in the pan for 5 minutes, then transfer the muffins to a wire rack to cool completely.

Notes

Use pure pumpkin puree rather than pumpkin pie filling.
Avoid overmixing the batter to keep the muffins soft and tender.
Spoon flour into the measuring cup and level it for more accurate results.
Add extra chocolate chips to the tops before baking for a bakery-style appearance.
Oven temperatures vary, so begin checking the muffins around 18 minutes.
For a quick shortcut, combine pumpkin puree with boxed spice cake mix and chocolate chips for a simple 3-ingredient-inspired version.
