- Preheat oven to 350°F and grease a baking dish.
- In a large bowl, combine peaches, blueberries, sugar, cornstarch, and lemon juice. Pour mixture into the prepared baking dish.
- In another bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in milk, melted butter, and vanilla extract until just combined.
- Spoon batter evenly over the fruit mixture.
- Bake for 40–45 minutes until golden brown and bubbly around the edges.
- Allow cobbler to cool slightly before serving warm.
Notes
- Fresh or frozen fruit both work well.
- Add cinnamon for extra warm flavor.
- Serve warm with vanilla ice cream or whipped cream.
- Store leftovers refrigerated for up to 4 days.
- Canned peaches may be used if drained well.
