Method
 

  1. Place shredded zucchini in a large bowl and sprinkle with salt.
  2. Let sit for 10 minutes to release excess moisture.
  3. Transfer zucchini to a clean kitchen towel and squeeze out as much liquid as possible.
  4. In a large bowl, combine zucchini, eggs, Parmesan cheese, flour, garlic, parsley, black pepper, and onion powder.
  5. Mix until well combined.
  6. Form the mixture into small patties using your hands or a scoop.
  7. Heat olive oil in a large skillet over medium heat.
  8. Cook the fritters for 3–4 minutes per side until golden brown and crispy.
  9. Transfer to a paper towel-lined plate.
