Ingredients

  • 4 bone-in skin-on chicken thighs
  • 1 ½ lbs baby potatoes halved
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Pan Gravy
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups chicken broth
  • ½ cup heavy cream optional for richer gravy
  • Salt & pepper to taste

Method
 

  1. Step 1 — Season the Chicken
  2. Preheat oven to 400°F (200°C).
  3. Pat chicken thighs dry.
  4. Season both sides with paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper.
  5. Step 2 — Prepare the Potatoes
  6. In a large baking dish or oven-safe skillet, add the halved potatoes and sliced onions.
  7. Drizzle with olive oil, add a pinch of salt and pepper, and toss well to coat.
  8. Step 3 — Assemble the Pan
  9. Place the seasoned chicken thighs on top of the potatoes and onions.
  10. Spread minced garlic around the pan for extra flavor.
  11. Step 4 — Bake
  12. Bake uncovered for 50–55 minutes, until chicken skin is crispy and internal temperature reaches 165°F (75°C).
  13. Remove chicken and potatoes from the pan and set aside.
  14. Step 5 — Make the Pan Gravy
  15. Place the baking dish or skillet on the stovetop over medium heat.
  16. Add butter, then whisk in flour to form a roux.
  17. Slowly pour in chicken broth while whisking to remove lumps.
  18. Add heavy cream (optional) and continue stirring until thickened.
  19. Taste and season with salt and pepper.
