Ingredients
  

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Optional Add-ins:
  • ½ cup raisins
  • ½ cup chocolate chips
  • ½ cup chopped nuts

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, cream butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla extract, mixing well.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually add dry ingredients to wet ingredients and mix until combined.
  6. Stir in oats and optional add-ins.
  7. Scoop dough onto baking sheet, spacing evenly.
  8. Bake for 10–12 minutes until edges are golden.
  9. Let cool before serving.

Notes

Use rolled oats for the best chewy texture.
Do not overbake to keep cookies soft.
Bake longer for Crispy Oatmeal Cookies.
Chill dough for thicker cookies.
Brown the butter for a richer Brown Butter Oatmeal Cookies flavor.
