Ingredients

  • For the Cake Layers:
  • cups all-purpose flour
  • tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • cups granulated sugar
  • 4 large eggs
  • 1 cup milk
  • 1 tbsp vanilla extract
  • 2 tbsp cocoa powder for chocolate layer
  • 2 tbsp strawberry puree or ½ tsp strawberry extract for strawberry layer
  • Optional: pink food coloring
  • For the Frosting:
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tbsp milk or heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Preheat oven to 350°F (175°C) and grease three 8-inch cake pans.
  2. In a large bowl, cream butter and sugar until fluffy. Add eggs one by one, then mix in vanilla.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Alternate adding the dry mixture and milk into the butter mixture until smooth.
  5. Divide batter evenly into three bowls:
  6. Keep one vanilla.
  7. Add cocoa powder to one for the chocolate layer.
  8. Add strawberry puree (and pink coloring if desired) to the third.
  9. Pour into pans and bake for 20–25 minutes or until a toothpick comes out clean.
  10. Let cool fully before frosting.
  11. Stack layers (chocolate, vanilla, strawberry) with frosting between each.
  12. Frost the top and sides, and decorate as desired.

Notes

  • Chill layers before frosting to make stacking easier.
  • Use strawberry jam for extra flavor between layers.
  • Swap strawberry for raspberry or cherry for a fun twist.
