Ingredients

  • For the Chocolate Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water
  • For the Chocolate Frosting
  • 1 cup unsalted butter softened
  • 3½ cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ⅓ cup milk plus more if needed
  • 2 teaspoons vanilla extract
  • A pinch of salt

Method

  1. Preheat the Oven: Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the Wet Ingredients: Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until the ingredients are combined, taking care not to overmix.
  4. Add the Hot Coffee: Slowly pour in the hot coffee or hot water while mixing on low speed. The batter will be thin, which is normal for this moist chocolate cake recipe.
  5. Fill the Cake Pans: Divide the batter evenly between the prepared pans.
  6. Bake: Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Cool the Cake Layers: Let the cakes cool in the pans for 10 minutes. Transfer them to wire racks and allow them to cool completely before frosting.
  8. Make the Chocolate Frosting: Beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder. Add the milk, vanilla extract, and salt, then beat until smooth and fluffy. Add a little extra milk if needed to achieve a spreadable consistency.
  9. Assemble the Cake: Place one cake layer on a serving plate. Spread frosting over the top, then place the second layer on top.
  10. Frost and Decorate: Cover the top and sides with the remaining frosting. Decorate with chocolate shavings, sprinkles, or fresh berries if desired.
  11. Slice and Serve: For neat slices, chill the cake briefly before cutting. Let each slice sit at room temperature for a short time before serving for the best texture.

Notes

Room-temperature ingredients: Use room-temperature eggs and buttermilk for a smoother batter.
Coffee substitute: Hot water works well if you prefer not to use coffee.
Avoid overbaking: Start checking the cake at 30 minutes to help maintain its moist texture.
Cool completely: Frosting warm cake can cause the frosting to melt.
Storage: Store in an airtight container in the refrigerator for up to 4–5 days. Allow slices to soften slightly at room temperature before serving.
Freezing: Wrap unfrosted cake layers tightly and freeze for up to 3 months. Thaw before assembling.
