  • 1 cucumber sliced
  • 1 avocado diced
  • ½ cup shredded carrots
  • ¼ cup red onion thinly sliced
  • ¼ cup shredded cheddar cheese optional
  • ¼ cup chopped pecans or walnuts
  • For the Honey Mustard Dressing
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Arrange the mixed greens in a large serving bowl.
  2. Top with sliced chicken, cherry tomatoes, cucumber, avocado, shredded carrots, red onion, cheese (if using), and chopped pecans.
  3. In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, lemon juice, salt, and black pepper until smooth.
  4. Drizzle the dressing over the salad.
  5. Toss gently until all ingredients are evenly coated.
  6. Serve immediately.
