Ingredients
  

  • For the Honey Lime Chicken
  • 1 lb boneless skinless chicken breast
  • 3 tbsp honey
  • Zest and juice of 2 limes
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • For the Rice
  • 1 cup long-grain white or brown rice
  • 2 cups water or chicken broth
  • ¼ tsp salt
  • For the Avocado Layer
  • 2 ripe avocados diced
  • 1 tbsp lime juice
  • Salt to taste

Method
 

  1. Marinate the Chicken
  2. In a bowl, mix honey, lime zest, lime juice, garlic, olive oil, salt, pepper, and paprika. Add chicken and marinate for at least 20 minutes.
  3. Cook the Rice
  4. Bring water or broth to a boil. Add rice and salt, cover, and simmer until tender. Fluff and set aside.
  5. Cook the Chicken
  6. Heat a skillet over medium heat. Cook marinated chicken for 6–7 minutes per side until golden and cooked through. Let rest, then slice.
  7. Prepare Avocado
  8. Toss diced avocado with lime juice and a pinch of salt.
  9. Assemble the Stack
  10. Layer rice, sliced chicken, and avocado using a bowl or ring mold.
  11. Serve
  12. Serve warm, drizzled with any remaining glaze if desired.

Notes

Substitute cauliflower rice for a low-carb option.
Chicken thighs can be used for extra juiciness.
Great for meal prep; store components separately.
Add chili flakes for heat.
Garnish with fresh cilantro for extra freshness.
