Preheat the oven to 375°F (190°C).
Remove the giblets from the chicken if necessary and pat the chicken completely dry with paper towels.
Place the chicken breast-side up in a roasting pan and rub the outside lightly with olive oil.
In a small bowl, whisk together the honey, melted butter, minced garlic, Dijon mustard, lemon juice, paprika, thyme, salt, black pepper, and onion powder.
Brush about one-third of the honey garlic glaze over the chicken, covering the breast, thighs, and legs.
If desired, gently loosen the breast skin and rub a small amount of glaze underneath.
Roast the chicken for about 1 hour 15 minutes to 1 hour 30 minutes, depending on its size.
Brush the chicken with additional glaze every 25–30 minutes during roasting.
If the skin becomes too dark, loosely cover the chicken with aluminum foil.
Continue roasting until the thickest part of the breast reaches 165°F (74°C).
Remove the chicken from the oven and loosely cover it with foil.
Let it rest for 15–20 minutes before carving.
Garnish with fresh parsley and lemon wedges, if desired.
