Preheat oven:
Set your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper or lightly grease it.
Prepare wet ingredients:
In a large mixing bowl, mash the ripe bananas until smooth. Add eggs, melted coconut oil, honey, and vanilla extract. Whisk together until well combined.
Mix dry ingredients:
In another bowl, whisk together whole wheat flour, baking soda, baking powder, salt, and cinnamon.
Combine mixtures:
Add the dry ingredients into the wet ingredients. Stir gently with a spatula until no dry flour remains. Don’t overmix — it keeps the bread soft.
Add extras (optional):
Fold in your nuts, chocolate chips, or seeds for added texture and flavor.
Bake:
Pour the batter into the loaf pan. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Cool and slice:
Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack. Slice and enjoy!
