Prepare the chicken:
Cut chicken breasts into bite-sized chunks and place them in a large bowl.
Make the marinade:
In a small bowl, whisk together ranch dressing, olive oil, minced garlic, grated Parmesan, paprika, salt, and black pepper.
Combine and marinate:
Pour the marinade over the chicken and toss until evenly coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
Assemble the skewers:
Thread marinated chicken pieces onto skewers, leaving small gaps between pieces for even grilling.
Grill:
Preheat your grill to medium-high heat. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is golden brown and fully cooked (internal temperature 165°F / 74°C).
Serve:
Brush lightly with extra ranch or melted butter, sprinkle with chopped parsley, and serve warm with lemon wedges or extra ranch for dipping.
