Method
- In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Add chicken and coat well. Cover and marinate for at least 1 hour (or up to 8 hours).
- Thread chicken and vegetables onto skewers.
- Grill over medium heat for 10–15 minutes, turning occasionally, until fully cooked.

- Remove from heat and let rest for a few minutes before serving.

- Use chicken thighs for extra juiciness.
- Full-fat Greek yogurt gives the best texture and flavor.

- Soak wooden skewers before grilling to prevent burning.
- Can be cooked as baked greek chicken if no grill is available.
