Ingredients
  

  • 2 chicken breasts or thighs cut into chunks
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1/2 red onion cut into chunks
  • For the Greek Yogurt Marinade:
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Method
 

  1. In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  2. Add chicken and coat well. Cover and marinate for at least 1 hour (or up to 8 hours).
  3. Thread chicken and vegetables onto skewers.
  4. Grill over medium heat for 10–15 minutes, turning occasionally, until fully cooked.
  5. (Alternatively, bake at 200°C / 400°F for 20–25 minutes.)
  6. Remove from heat and let rest for a few minutes before serving.

Notes

  • Use chicken thighs for extra juiciness.
  • Full-fat Greek yogurt gives the best texture and flavor.
  • Add vegetables like zucchini or cherry tomatoes for variety.
  • Soak wooden skewers before grilling to prevent burning.
  • Can be cooked as baked greek chicken if no grill is available.
