Ingredients
  

  • 2 tbsp olive oil or butter
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 carrot diced
  • 1 stalk celery diced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk for vegan version
  • 1 package 16 oz potato gnocchi
  • 2 cups fresh spinach or kale optional
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • Salt to taste
  • ¼ cup grated Parmesan cheese optional or vegan cheese alternative
  • 1 tbsp fresh parsley chopped (for garnish)

Method
 

  1. Sauté aromatics: Heat olive oil or butter in a large pot over medium heat. Add onion, carrot, and celery. Cook for 5 minutes until softened.
  2. Add garlic and seasonings: Stir in garlic, thyme, salt, and black pepper. Cook for another 30 seconds until fragrant.
  3. Simmer broth: Pour in the broth and bring to a gentle boil.
  4. Add gnocchi: Stir in the potato gnocchi and cook for 4–5 minutes, until they float to the top.
  5. Make it creamy: Lower the heat, add cream or coconut milk, and stir gently. Add spinach or kale if using, and simmer for another 2–3 minutes.
  6. Finish and serve: Adjust salt and pepper. Garnish with Parmesan cheese and parsley. Serve warm.
