Ingredients
  

  • 3 cups all-purpose flour
  • ¾ cup brown sugar
  • ½ cup butter softened
  • ½ cup molasses
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • For Icing Optional:
  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • ½ teaspoon vanilla extract

Method
 

  1. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  2. In another bowl, cream butter and brown sugar until smooth.
  3. Add molasses and egg, mixing well.
  4. Gradually add dry ingredients to form a dough.
  5. Wrap dough and chill for at least 1 hour.
  6. Preheat oven to 180°C (350°F).
  7. Roll out dough and cut into desired shapes.
  8. Place on a lined baking sheet and bake for 8–10 minutes.
  9. Let cool completely before decorating with icing if desired.

Notes

Chill dough to make it easier to roll and cut.
Do not overbake to keep Chewy Gingerbread Cookies soft.
Roll dough evenly for consistent baking.
