Method
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, cream butter and brown sugar until smooth.
- Add molasses and egg, mixing well.
- Gradually add dry ingredients to form a dough.
- Wrap dough and chill for at least 1 hour.
- Preheat oven to 180°C (350°F).
- Roll out dough and cut into desired shapes.
- Place on a lined baking sheet and bake for 8–10 minutes.
- Let cool completely before decorating with icing if desired.
