- Season steak bites with 1/2 teaspoon salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high. Sear steak 2–3 minutes per side until browned, then remove to a plate.
- Reduce heat to medium, add butter, and sauté garlic for 30–45 seconds until fragrant.
- Stir in broth and simmer 2 minutes to reduce slightly.
- Pour in cream and Parmesan, whisking until the sauce becomes smooth and lightly thickened.
- Add tortellini to the pan and simmer 4–6 minutes, stirring occasionally, until tender.
- Return steak to the skillet, fold in spinach if using, and cook 1–2 minutes more.
- Taste and season with remaining salt if needed. Serve warm.
Notes
Use a very hot pan to get flavorful seared steak bites.
If the sauce thickens too much, add a splash of broth or cream.
Frozen tortellini works — just cook a few minutes longer.
For extra heat, add a pinch of crushed red pepper.
