Ingredients

  • 1 lb sirloin or ribeye steak cut into bite-size cubes
  • 1 tsp salt divided
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup beef or chicken broth
  • 1 1/2 cups heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 18 –20 oz refrigerated cheese tortellini
  • 2 cups fresh spinach optional
  • Crushed red pepper to taste (optional)

Method

  1. Season steak bites with 1/2 teaspoon salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high. Sear steak 2–3 minutes per side until browned, then remove to a plate.
  3. Reduce heat to medium, add butter, and sauté garlic for 30–45 seconds until fragrant.
  4. Stir in broth and simmer 2 minutes to reduce slightly.
  5. Pour in cream and Parmesan, whisking until the sauce becomes smooth and lightly thickened.
  6. Add tortellini to the pan and simmer 4–6 minutes, stirring occasionally, until tender.
  7. Return steak to the skillet, fold in spinach if using, and cook 1–2 minutes more.
  8. Taste and season with remaining salt if needed. Serve warm.

Notes

Use a very hot pan to get flavorful seared steak bites.
If the sauce thickens too much, add a splash of broth or cream.
Frozen tortellini works — just cook a few minutes longer.
For extra heat, add a pinch of crushed red pepper.
