  • 3 medium zucchini sliced into ½-inch rounds or spears
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon lemon zest optional

Method
 

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the olive oil, minced garlic, Italian seasoning, paprika, salt, and black pepper.
  3. Add the zucchini and toss until evenly coated.
  4. Sprinkle the Parmesan cheese over the zucchini and toss gently to coat.
  5. Arrange the zucchini in a single layer on the prepared baking sheet, leaving a little space between the pieces.
  6. Roast for 20–25 minutes, turning the zucchini halfway through cooking, until tender and lightly browned with crispy edges.
  7. Remove from the oven and garnish with chopped parsley and lemon zest, if desired.
  8. Serve immediately while warm.

Notes

  • Freshly grated Parmesan melts and browns better than pre-shredded cheese.
  • Avoid overcrowding the baking sheet to help the zucchini roast instead of steam.
  • For extra color, replace half the zucchini with yellow squash to make roasted zucchini and yellow squash.
