Garlic Parmesan Crockpot Chicken & Potatoes

Ingredients
  

  • 2 lbs boneless chicken breasts or thighs
  • 1 ½ lbs baby potatoes halved
  • 4 tbsp butter melted
  • 6 cloves garlic minced
  • ¾ cup chicken broth
  • ½ cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt & pepper
  • ¼ cup heavy cream optional
  • Fresh parsley

Method
 

  1. Place potatoes in crockpot.
  2. Season chicken; place on top.
  3. Whisk butter, garlic, broth, and Parmesan; pour over.
  4. Cook on Low 5–6 hours or High 2½–3 hours.
  5. Stir in cream (optional), adjust seasoning, garnish, and serve.

Notes

Use chicken thighs for juicier results.
Thicken sauce with a cornstarch slurry if needed.
Stores in the fridge up to 3 days; reheats well.
