Ingredients
  

  • 2 lbs boneless skinless chicken breast, cut into chunks
  • lbs baby potatoes halved
  • 4 cloves garlic minced
  • cup grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh parsley chopped (optional)

Method
 

  1. Preheat Oven
  2. Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  3. Season Chicken and Potatoes
  4. In a large bowl, combine chicken, potatoes, garlic, olive oil, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper. Toss until evenly coated.
