Ingredients
  

  • 2 cups mixed dried fruit raisins, cherries, apricots, cranberries
  • ½ cup chopped nuts walnuts, almonds, or pecans
  • 1 cup all-purpose flour
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup milk or orange juice for soaking
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Pinch of salt

Method
 

  1. Preheat the oven to 325°F (160°C). Grease and line a loaf pan with parchment paper.
  2. Soak the fruit: Place dried fruit in a bowl and cover with orange juice or milk. Let it soak for 20–30 minutes.
  3. Mix the batter: In a mixing bowl, cream butter and sugar until fluffy. Beat in eggs, one at a time.
  4. Combine dry ingredients: In a separate bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg. Gradually fold into the wet mixture.
  5. Add fruits and nuts: Gently stir soaked fruits (drained) and nuts into the batter.
  6. Bake the cake: Pour batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
