- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and brown sugar.
- In a separate bowl, whisk together the pumpkin puree, egg, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few small lumps are fine.
- If the batter is too thick, add 1–2 tablespoons of milk to reach a thick but pourable consistency.
- Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter.
- Pour about ¼ cup of batter onto the hot skillet for each pancake.
- Cook for 2–3 minutes, until bubbles appear on the surface and the edges look set.
- Flip and cook for another 1–2 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter, lightly greasing the skillet as needed.
- Serve warm with your favorite toppings.

Use pure pumpkin puree rather than pumpkin pie filling.
Avoid overmixing the batter to keep the pancakes light and fluffy.
Pumpkin pancakes can brown quickly, so medium heat works best.
