- Add Everything to the Crockpot
- Place chicken breasts at the bottom. Add black beans, corn, tomatoes, salsa, taco seasoning, garlic powder, and onion powder.
- Cook
- Cook on Low for 6 hours or High for 3–4 hours, until chicken is tender.
- Shred the Chicken
- Remove chicken, shred with two forks, and return it to the slow cooker. Mix well.
- Add Creaminess
- Stir in cream cheese, shredded cheese, or sour cream. Let melt for 10–15 minutes.
- Finish & Serve
- Add lime juice and cilantro. Taste and adjust seasoning. Serve warm.
Notes
Want it spicier? Use hot salsa or add jalapeños.
For a lighter version, use Greek yogurt instead of sour cream.
You can use chicken thighs for extra tenderness.
Add extra veggies such as bell peppers or onions for more volume.
