Fiesta Chicken Crock Pot Recipe

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can diced tomatoes with green chilies Rotel style
  • 1 cup salsa your preferred heat level
  • 1 packet taco seasoning or 2 tbsp homemade seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Creamy Add-Ins Choose one or more
  • 4 oz cream cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup sour cream
  • Optional Extras
  • Fresh lime juice
  • Fresh cilantro
  • Jalapeños
  • Chili flakes
  • Extra seasoning to taste

Method
 

  1. Add Everything to the Crockpot
  2. Place chicken breasts at the bottom. Add black beans, corn, tomatoes, salsa, taco seasoning, garlic powder, and onion powder.
  3. Cook
  4. Cook on Low for 6 hours or High for 3–4 hours, until chicken is tender.
  5. Shred the Chicken
  6. Remove chicken, shred with two forks, and return it to the slow cooker. Mix well.
  7. Add Creaminess
  8. Stir in cream cheese, shredded cheese, or sour cream. Let melt for 10–15 minutes.
  9. Finish & Serve
  10. Add lime juice and cilantro. Taste and adjust seasoning. Serve warm.

Notes

 
Want it spicier? Use hot salsa or add jalapeños.
For a lighter version, use Greek yogurt instead of sour cream.
You can use chicken thighs for extra tenderness.
Add extra veggies such as bell peppers or onions for more volume.
