Method
 

  1. Preheat oven to 350°F.
  2. In a large bowl, combine peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch. Mix gently.
  3. Transfer peach mixture into a greased 9x13-inch baking dish.
  4. In another bowl, combine oats, flour, brown sugar, cinnamon, and salt.
  5. Pour melted butter into the oat mixture and stir until crumbly.
  6. Sprinkle topping evenly over the peaches.
  7. Bake for 40–45 minutes or until topping is golden brown and peaches are bubbly.
