- Preheat oven to 350°F.
- In a large bowl, combine peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch. Mix gently.
- Transfer peach mixture into a greased 9x13-inch baking dish.
- In another bowl, combine oats, flour, brown sugar, cinnamon, and salt.
- Pour melted butter into the oat mixture and stir until crumbly.
- Sprinkle topping evenly over the peaches.
- Bake for 40–45 minutes or until topping is golden brown and peaches are bubbly.
- Let cool slightly before serving warm.

- Fresh ripe peaches create the best flavor for a homemade dessert.
- Drain canned peaches slightly before using.
