Prepare ingredients: Wash and chop all vegetables.
Optional – Brown the meat: In a skillet, lightly brown the chicken for deeper flavor, then transfer to the Crockpot.
Layer in Crockpot: Add all chopped vegetables, seasonings, and broth.
Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is tender and veggies are soft.
Add greens: During the last 15 minutes, stir in spinach or kale.
Finish & serve: Shred the chicken with a fork, adjust seasonings, and serve hot with crusty bread or a side salad.
