Ingredients
  

  • 1 lb 450 g boneless, skinless chicken breast or thighs
  • 1 medium onion chopped
  • 2 carrots peeled and sliced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 3 –4 cups chicken broth or vegetable broth
  • 1 can 14 oz diced tomatoes
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 cup diced potatoes or sweet potatoes
  • 1 cup green beans peas, or corn
  • 1 cup spinach or kale added near the end
  • Optional: ½ cup cooked rice or pasta for a heartier meal

Method
 

  1. Prepare ingredients: Wash and chop all vegetables.
  2. Optional – Brown the meat: In a skillet, lightly brown the chicken for deeper flavor, then transfer to the Crockpot.
  3. Layer in Crockpot: Add all chopped vegetables, seasonings, and broth.
  4. Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is tender and veggies are soft.
  5. Add greens: During the last 15 minutes, stir in spinach or kale.
  6. Finish & serve: Shred the chicken with a fork, adjust seasonings, and serve hot with crusty bread or a side salad.
