Crockpot Lasagna Soup

Ingredients
  

  • lb 450 g lean ground beef or ground turkey
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 can 28 oz crushed tomatoes
  • 1 can 15 oz tomato sauce
  • 4 cups low-sodium beef or vegetable broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 8 oz 225 g lasagna noodles, broken into small pieces
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • ¼ cup grated parmesan cheese
  • Optional: chopped parsley or basil for garnish

Method
 

  1. Cook the Ground Beef:
  2. In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess grease.
  3. Add to Crockpot:
  4. Transfer the cooked meat to your Crockpot. Add crushed tomatoes, tomato sauce, broth, Italian seasoning, basil, salt, and pepper. Stir well to combine.
  5. Slow Cook:
  6. Cover and cook on Low for 6–7 hours or High for 3–4 hours.
  7. Add Pasta:
  8. About 30 minutes before serving, add broken lasagna noodles. Stir, cover, and continue cooking until noodles are tender.
  9. Add Cheese:
  10. Just before serving, stir in mozzarella and parmesan.
  11. Serve and Enjoy:
  12. Spoon the soup into bowls and top each serving with a dollop of ricotta and a sprinkle of fresh parsley or basil.
