Cook the Ground Beef:
In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess grease.
Add to Crockpot:
Transfer the cooked meat to your Crockpot. Add crushed tomatoes, tomato sauce, broth, Italian seasoning, basil, salt, and pepper. Stir well to combine.
Slow Cook:
Cover and cook on Low for 6–7 hours or High for 3–4 hours.
Add Pasta:
About 30 minutes before serving, add broken lasagna noodles. Stir, cover, and continue cooking until noodles are tender.
Add Cheese:
Just before serving, stir in mozzarella and parmesan.
Serve and Enjoy:
Spoon the soup into bowls and top each serving with a dollop of ricotta and a sprinkle of fresh parsley or basil.
